Why the Focaccia?

The authentic Italian Focaccia arrives in Copenhagen

Our journey began with a love for Italian cuisine and a desire to bring the authentic flavors of Italy to the streets of Copenhagen. We wanted to create a restaurant that combined traditional Italian cooking techniques with the laid-back atmosphere of street food culture.


Naturally, this lead to focus on the focaccia, a classic Italian bread that's versatile, flavorful, and perfect for creating delicious street food dishes. Our focaccia is made fresh daily, using a secret family recipe that's been passed down for generations. We combine this artisanal bread with the freshest ingredients, creating a taste that's both authentic and innovative. 


Our focacceria places great emphasis on the association of flavors, with all ingredients and condiments meticulously combined to work together in harmony. This careful planning allows us to create a menu that is not only delicious but also perfectly balanced in taste. Each item on our menu has been carefully curated to highlight the best of Italian cuisine, with a focus on the use of fresh, high-quality ingredients. We believe that every dish should be a harmonious blend of flavors, and we strive to achieve this in every bite. 


But our passion for food doesn't stop with our menu. We also believe in sustainability and responsible sourcing. That's why we source all our ingredients from local suppliers. We believe that food should be both delicious and ethical, and we're committed to reducing our environmental impact.


At our Focacceria, we're more than just a place to grab a quick bite to eat. We're a community of food lovers who share a passion for authentic Italian cuisine and sustainable practices. We believe that food brings people together, and we're proud to be a part of the vibrant food scene in Copenhagen.

Luca Scaglia

La Posata was born from something deeply personal — a lifelong love for food, people, and the simple joy of sharing a good meal.


I grew up between Italy and Switzerland, surrounded by my grandparents from Puglia and Sicily, whose kitchen was the heart of every family gathering. They taught me what real food means — not just recipes, but respect for ingredients, time, and love. Those childhood moments, from kneading dough with my Nonna to walking through local markets with my grandfather, are still the foundation of everything I do today.


At twelve, my family moved to Copenhagen. It was a new world — different language, culture, and rhythm — but I quickly learned to see food as a bridge between people. That mix of Italian warmth and Danish simplicity shaped who I am and the way I cook.


After studying hospitality management at Ecole Hôtelière de Lausanne (EHL) and working in Paris and New York, I realized that my real happiness was not in luxury hotels or fine dining — it was in creating something genuine, something that felt like home.


So I came back to Copenhagen, the city that feels most like mine, and opened La Posata in 2022. My dream was simple: to make Italian food that feels personal — focaccia sandwiches and homemade delicacies made from scratch, with love and tradition behind every bite.


At La Posata, we’re more than a restaurant. We’re a small family — a team that works with heart, laughter, and care. You can feel it in the air, in the kitchen, and in every person who walks through our door.


La Posata is my way of sharing a piece of my story — my Nonna’s legacy, my travels, my roots — and turning it into a place where everyone feels welcome. Because for me, food has always been about people, memories, and the warmth of being together.
